Providing you with healthy options is something your Lehigh Dining Team proudly does every day. We help you select delicious, nutritious & satisfying meals, snacks and desserts by highlighting well-balanced menu choices, and providing nutritional information and tips to help you make choices that fit your needs. In addition, our on-campus Registered Dietitian works to provide students, faculty & staff with complimentary, yearly access to comprehensive Medical Nutrition Therapy for a variety of conditions, individualized nutrition counseling services, and fun educational seminars & events throughout the year.
 
For students with medical conditions that impact their ability to dine well on campus, we strongly encourage a conversation with our Registered  Dietitian, Executive Chef, and/or General Manager.  In many instances, our dining team can easily assist with special needs.  Occasionally, Dining Services cannot meet a student’s medical needs within normal service.  
 
We may require additional medical documentation to enable us to develop a more specific meal plan accommodation.  In this situation, please visit the Office of Disability Services at https://studentaffairs.lehigh.edu/disabilities for details and instructions on how to submit a meal plan accommodation request.  This process is for those with medically documented diagnosis/-es that need to request special dining accommodations or have medically prescribed diet plans for the treatment of a medical condition.  Together, our departments work to serve our students with medical needs related to dining on campus.

As we embark on an exciting transition to welcome a new dietitian to our team, we want to ensure a seamless experience for you. During this interim period, we're thrilled to  introduce you to Sue, our temporary contact and seasoned nutrition expert.

For over 25 years, Susan has worked as a Registered Dietitian in college & university food service. She works in tandem with Disability Support Services to provide dining accommodations for students with medical needs that impact their ability to dine on campus. She also works with students, faculty, and staff to help ensure their nutritional well-being.

Susan conducts staff food allergy training throughout the year. She holds certificates in the National Restaurant Association’s (NRA) ServSafe™ Allergens training and the Academy of Nutrition and Dietetics Food Allergy program. Additionally, as an AllerTrain™ certified trainer, Susan teaches AllerTrainU™ to our food service team and is a past recipient of their Master Trainer of the Month award. Susan actively leads Sodexo teams in the ongoing development of operational and training standards for allergen safety.
