Talk to Us about Your Food Allergies and Diet Needs! College is complicated enough; enjoying a meal at the resident dining hall doesn't have to be! Choosing meals can present undue anxiety for the growing number of students who arrive on college campuses with food allergies or gluten intolerance. 

We are all passionate about serving students. From the general manager & on-campus Registered Dietitian to the front line servers, we work diligently to address students’ specific needs, especially those with food allergies, Celiac disease, or special dietary needs. 

Lehigh Dining is committed to providing the finest quality meals and services to the entire Lehigh University community– students, faculty, staff and guests. 

To address these growing number of students with food allergies, Lehigh Dining has developed, Simple Servings, a station that is dedicated to providing fresh meals prepared with minimally processed ingredients. Simple Servings is open to all students, so those with food allergies or other dietary concerns are not singled out. All foods offered at the Simple Serving station are prepared exclusively with ingredients which do not contain the following foods: milk, eggs, wheat, soy, shellfish, peanuts, tree nuts (such as walnuts, pecans, hazelnuts, almonds and cashews) and also eliminates gluten-containing ingredients. The lunch and dinner menus change daily and include a variety of protein options (fish, beef, pork, chicken and turkey) and vegan dishes. 

Lehigh Dining staff are also carefully trained to avoid cross-contact of menu items. Separate equipment, storage areas, utensils, and preparation areas minimize, but do not completely eliminate the chances of gluten and other allergens in dining and retail spaces.

Meet Your Dietitian

KeriLasky

As the on-campus Registered Dietitian for Lehigh University, Keri Lasky, MS, RDN, LDN, CLT works with students, faculty & staff to educate them on making healthier choices while dining on campus and beyond.  Keri helps students create meal plans that work with their busy schedules and provides nutrition counseling for a variety of topics, including food allergies, food intolerances, improving body composition, diabetes, high blood pressure, gastrointestinal disease, general wellness & so much more.  She carries out a variety of nutrition-related, on-campus seminars & events throughout the year, and even conducts dining hall tours for students, faculty & staff looking to improve their health.

Keri received her Bachelor’s Degree in the Science of Nutrition at Cedar Crest College in 2011.  She completed her dietetic internship with the College of Saint Elizabeth in 2012, and while working as a clinical dietitian in acute care, she attained her Master’s Degree in the Science of Nutrition from the College of Saint Elizabeth as well.  Keri was a Retail Dietitian for a major grocery store chain for six years, which is where she become a Certified Lifestyle Eating and Performance (LEAP) Therapist that specializes in testing and counseling for food sensitivities.  

Her passions include developing, promoting, and delivering health & wellness programs/services to the community, and making healthy eating fun & enjoyable.  Outside of the workplace, Keri loves rock music, movies, and taking care of her English bulldog, Wallace.

Keri can provide nutrition counseling for a variety of topics including food allergies, food intolerances, weight management, diabetes, high blood pressure, gastrointestinal diseases, healthy eating habits, and much more. All appointments are confidential.
